- 200 gr of rice noodles, cooked and drained
- 2 stalks of green onions, chopped
- 2 limes, cut into wedges

Instructions
Step 1: Prepare the Broth
First, prepare the broth. In a large pot, boil the water and add the chicken, kaffir lime leaves, lemongrass, and bay leaves. Cook until the chicken is tender, for about 30 minutes. Remove the chicken from the pot and set it aside. Strain the broth and set it aside.
Step 2: Make the Spice Paste
To make the spice paste, grind together the garlic, shallots, ginger, and galangal. Toast the coriander and cumin seeds in a dry pan until fragrant, then grind them into a fine powder. Mix the spice paste with the ground coriander, cumin, and turmeric powder.
Step 3: Cook the Spice Paste
In a pan, sauté the spice paste until fragrant. Add the spice paste to the broth and let it simmer for 10 minutes.
Step 4: Prepare the Chicken
Shred the chicken into small pieces and add it back to the pot. Add salt and sugar to taste. Simmer for another 10 minutes.
Step 5: Serve the Soto Banjar
Divide the rice noodles and bean sprouts into bowls. Ladle the hot soup over the noodles and bean sprouts. Garnish with chopped green onions, fried shallots, and crackers. Serve with lime wedges.
