Add the garlic, shallots, and ginger, and sauté until fragrant. 3. Add the pork bones to the pot and fill it with water. Bring to a boil and then reduce the heat to low. 4. Simmer the broth for at least 6 hours, or until the bones are very soft and the broth is milky white. 5. Skim off any impurities that rise to the top of the broth. 6. Add the soy sauce, fish sauce, sake, salt, sugar, and black pepper to the pot. Continue to simmer for another hour. 7. Strain the broth through a fine-mesh sieve and discard the solids. 8. To serve, reheat the broth and pour it over cooked ramen noodles and toppings of your choice.
