  • 1 kg squid, cleaned and cut into rings
  • 2 cups thick coconut milk
  • 1 cup thin coconut milk
  • 2 lemongrass stalks, bruised
  • 6 kaffir lime leaves
  • 3 salam leaves
  • 2 turmeric leaves, sliced thinly
  • 2 tbsp tamarind paste
  • 1 tsp salt
  • 1 tsp sugar
  • 2 tbsp oil

For the spice paste, you’ll need:

  • 10 shallots
  • 5 cloves garlic
  • 10 red chilies (more or less, depending on your spice tolerance)
  • 5 bird’s eye chilies (optional)
  • 1 inch galangal
  • 1 inch ginger
  • 1 tsp coriander seeds
  • 1 tsp cumin seeds
  • 1 tsp fennel seeds
  • 1 tsp turmeric powder


Making the spice paste

1. In a mortar and pestle or food processor, grind the shallots, garlic, chilies, galangal, and ginger into a fine paste. 2. Heat a pan over medium heat and dry roast the coriander, cumin, and fennel seeds until fragrant. 3. Add the roasted spices and turmeric powder to the spice paste and mix well.

Making the gulai cumi padang

1. Heat the oil in a large pot over medium heat. 2. Add the spice paste and sauté until fragrant, about 5 minutes. 3. Add the thick coconut milk, lemongrass, kaffir lime leaves, salam leaves, turmeric leaves, tamarind paste, salt, and sugar. Stir well. 4. Bring the mixture to a boil, then reduce the heat to low and let simmer for 15 minutes. 5. Add the squid and thin coconut milk to the pot and stir gently. 6. Let the curry simmer for another 10 minutes, or until the squid is cooked through and tender. 7. Serve hot with steamed rice.
