1. In a large bowl, mix together the chicken, garlic, shallots, lemongrass, kaffir lime leaves, salt, sugar, turmeric powder, coriander powder, cumin powder, and paprika powder. Make sure the chicken is coated evenly with the spices. Cover the bowl and marinate the chicken for at least 2 hours in the fridge. 2. After marinating, take out the chicken and let it sit at room temperature for 30 minutes. 3. In a separate bowl, mix together the rice flour and corn flour. 4. Heat the oil in a wok or a deep frying pan over medium-high heat. 5. Coat each piece of chicken in the flour mixture and shake off any excess. 6. Carefully place the chicken in the hot oil and fry for about 8-10 minutes or until golden brown and crispy. Do not overcrowd the pan. 7. Once done, remove the chicken from the oil and place it on a paper towel to remove any excess oil. 8. Serve the ayam goreng laos hot with steamed rice and sambal.
