Step 2: Saute the Aromatics

In the same pan, saute the shallots and garlic until fragrant. Add the coriander powder and turmeric powder and cook for another minute.

Step 3: Add Coconut Milk and Spices

Pour in the coconut milk and add the kaffir lime leaves, lemongrass, and bay leaves. Stir well and bring to a boil. Reduce the heat to low and let simmer for 10 minutes.

Step 4: Add Fried Tofu

Add the fried tofu to the pan and stir gently. Add water as needed to adjust the consistency of the sauce. Simmer for another 10 minutes.

Step 5: Season and Serve

Season with salt to taste. Remove from heat and serve with rice, fried chicken, boiled eggs, and sambal.
