To make the broth, heat oil in a pan and sauté the shallots and garlic until fragrant. Add the lemongrass, bay leaves, and turmeric powder. Stir for a few minutes until the spices are fragrant. 5. Add the coconut milk, water, kaffir lime leaves, salt, and sugar. Bring to a boil and then reduce the heat. Let it simmer for about 20 minutes. 6. Add the vegetables to the broth and cook for a few minutes until they are cooked but still crunchy. 7. To serve, cut the ketupat into small pieces and place them in a bowl. Spoon the vegetables and broth over the ketupat. Garnish with fried onions and sliced red chilies.
