Bebek rica-rica is a spicy duck dish from Manado, North Sulawesi. The dish is made of duck meat cooked in a spicy sauce made from a blend of chili peppers, shallots, garlic, ginger, and other spices. The dish is typically served with steamed rice and fresh vegetables.
Ingredients
For the duck: – 1 whole duck, cut into pieces – 2 tbsp tamarind juice – 2 tbsp lime juice – Salt to taste For the spice paste (bumbu): – 10 red chili peppers – 5 bird’s eye chili peppers – 10 shallots – 5 garlic cloves – 2 cm ginger – 2 cm galangal – 2 stalks lemongrass – 1 tsp salt For the sauce: – 2 tbsp oil – 3 kaffir lime leaves – 2 stalks lemongrass, bruised – 1 cup water – 2 tbsp sweet soy sauce – Salt to taste
Instructions
1. Clean the duck pieces and pat dry. 2. Marinate the duck with tamarind juice, lime juice, and salt for 30 minutes. 3. To make the spice paste (bumbu), blend all the ingredients in a food processor or mortar and pestle until smooth. 4. Heat oil in a pan and sauté the spice paste until fragrant. 5. Add kaffir lime leaves and lemongrass, and cook for 1-2 minutes. 6. Add the marinated duck pieces and stir until the duck is coated with the spice paste. 7. Add water, sweet soy sauce, and salt. Stir well. 8. Cover the pan and simmer until the duck is cooked and the sauce thickens. 9. Serve hot with steamed rice and fresh vegetables.
