Here are the ingredients you will need:

  • 1 whole chicken, cut into pieces
  • 500 grams beef, cut into pieces
  • 2 liters water
  • 1 lemongrass, bruised
  • 3 bay leaves
  • 5 kaffir lime leaves
  • 2 turmeric leaves
  • 2 tablespoons cooking oil
  • 5 shallots, sliced
  • 4 garlic cloves, sliced
  • 5 candlenuts
  • 2 teaspoons coriander powder
  • 1 teaspoon cumin powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 2 tablespoons tamarind water
  • 500 grams rice cake, sliced
  • 250 grams bean sprouts, blanched
  • 5 stalks celery, chopped
  • 5 stalks scallions, chopped
  • 5 lime, cut into wedges


Here are the instructions for making Soto Banjar:

  1. Boil the chicken and beef in a pot of water until cooked. Remove the meat from the pot, set aside, and strain the broth.
  2. In another pot, heat the cooking oil over medium heat. Add the shallots, garlic, and candlenuts, sauté until fragrant.
  3. Add the coriander powder, cumin powder, turmeric powder, and salt. Stir well.
  4. Add the strained broth, lemongrass, bay leaves, kaffir lime leaves, turmeric leaves, and sugar. Bring to a boil.
  5. Add the tamarind water and simmer for 30 minutes.
  6. Add the chicken and beef, simmer for another 10 minutes.
  7. To serve, place sliced rice cake and bean sprouts in a bowl. Pour the soup over the rice cake and bean sprouts.
  8. Garnish with chopped celery, scallions, and fried shallots.
  9. Serve with lime wedges.
