- 5 shallots, sliced
- 4 garlic cloves, sliced
- 5 candlenuts
- 2 teaspoons coriander powder
- 1 teaspoon cumin powder
- 1 teaspoon turmeric powder
- 1 teaspoon salt
- 1 teaspoon sugar
- 2 tablespoons tamarind water
- 500 grams rice cake, sliced
- 250 grams bean sprouts, blanched
- 5 stalks celery, chopped
- 5 stalks scallions, chopped
- 5 lime, cut into wedges
Here are the instructions for making Soto Banjar:
- Boil the chicken and beef in a pot of water until cooked. Remove the meat from the pot, set aside, and strain the broth.
- In another pot, heat the cooking oil over medium heat. Add the shallots, garlic, and candlenuts, sauté until fragrant.
- Add the coriander powder, cumin powder, turmeric powder, and salt. Stir well.
- Add the strained broth, lemongrass, bay leaves, kaffir lime leaves, turmeric leaves, and sugar. Bring to a boil.
- Add the tamarind water and simmer for 30 minutes.
- Add the chicken and beef, simmer for another 10 minutes.
- To serve, place sliced rice cake and bean sprouts in a bowl. Pour the soup over the rice cake and bean sprouts.
- Garnish with chopped celery, scallions, and fried shallots.
- Serve with lime wedges.
